Processing techniques

The cutting of the staves, that is, the axes of wood which constitute the barrel, is the first operation that is performed for the creation of the finished product. The round-bottom barrels are the most common because they are easy to build and easy when traveling, but there are also deep oval barrels, more expensive for their implementation difficult. For large barrels (7-10 hl) using slats sawn, for smaller barrels or barrels (225-350 liters) using slats splitted, more expensive because their processing involves a large waste of material, but because the top less porous.

The key issue is the aging ranging from 18 months for the staves thinner than 4-5 years for those thicker. The little wooden seasoned wines impression bitter and astringent. Before assembly, the staves are selected, discarding the defective material or cut so not precise, since it is fundamental the perfect adherence between the staves.

The staves are then subjected to bending, which can be carried out with steam treatment, to fire or with the two techniques combined. The method in focus is the oldest and is to establish the slats at the top with some hoops provisional entering the inner base a brazier. The roasting is the next step and consists of 5-15 minutes extra to your regular bending the staves, with which you have a greater release of extract. Before that the barrels are placed on the market, a test is done by filling the barrel of water to check its resistance and capacitance.
